Disney Pankcakes

When life gives you lemons, make lemonade. And when a pandemic closes Disney, and everything else, make Mickey pancakes. :)

One way for me to deal with the anxieties of the unknown that we are all facing right now, is to plan something. ANYTHING. It gives me a place to focus my energy. Since planning the coming days is for myself and my son Brody, he gets a vote in what we do…..except for the closet clean out day I have planned. He won’t like it, but it’s going down.

He loves our time at Disney as much as I do so it was no surprise when he asked if we could pull out the Mickey pancake maker. However, instead of just mixing up the Bisquick, I took it a step further and found a Disney pancake recipe. These are the Top of the World Pancakes from Disney’s Contemporary Resort from Mickey’s Gourmet Cookbook. These are delicious!

Ingredients:

  • 1 egg

  • 4 tbsp oil

  • 1/3 cup milk

  • 1/3 cup water

  • 2 tsp vanilla extract

  • 2 cups buttermilk pancake mix

  • 4 tbsp sugar

  • 1 tsp baking powder

  1. In a medium size bowl, combine the egg, vanilla, milk, oil and water. Whisk them together well.

  2. In another medium bowl, sift together the pancake mix, sugar and baking powder.

    Confession: I did not sift and I cut the sugar amount in half. :)

  3. Add the pancake mixture to the egg mixture, whisking the entire time. Whisk it and whisk it good!

  4. Grease your pan or griddle and start cooking!

    This makes a thick batter, I added a little water to it to thin it out.

After pancakes, we hopped online to catch a Disney artist give a class on how to draw Baby Yoda. Followed by watching the Cincinnati Zoo’s broadcast of the hippos. Today was a good day. Now to figure out what we will do tomorrow. What is everyone else doing? Let me know!
